The project aims at developing a system-change approach from current linear-thinking to an approach that upgrades and re-utilises unavoidable industrial food wastes to create new food products. The following feedstocks are being analysed as a source of functional food ingredients: brewers’ spent grain, pea vine waste, out of specification citrus fruits and potato waste. Large UK food manufacturers are participating in the project to ensure that the technologies and processes developed in the project are applicable at an industrial scale. Guillermo’s focus is on waste flow modelling and Life Cycle Assessment (LCA).
